Lemon Butterfly Cakes

Hello Lovlies,

I love everything to do with afternoon tea, as I was flicking through one of mums cook book I saw this recipe for Lemon Butterfly Cakes and just had to try it out! Below the is recipe so you can cook these at home! 

The ingredients 
100g self raising flour
100g caster sugar
2 eggs
100g marginrine
Lemon zest
1 teaspoon baking powder
Lemon curd

Butter icing
100g icing sugar suifed
50g butter

1) Preheat the oven to 160C fan or gas mark 4. Line a bun tine with 12 fairy cake cases.
2) Measure all cake ingredients expect for lemond curd into a large bowl and beat well, until the mixture is well blended and smooth. 

4)Fill each paper case with a spoonful of the mixture.

 5) Bake in the oven for 15-20 minutes until the cakes are well risen and golden brown. Lift the cases out of the tin and cool the cakes on a wire rack.

 6) When cool, cut a disc out of the top of each cake, leaving a little rim around the edge, cut the disc in half. Spoon a teaspoon of lemon curd one top each cake.

7) To make the icing, beat butter and icing sugar together until well blended. 

8) Spoon a dollop of the mixture on top of the lemon curd. Place the half slices of cake on top to resemble butterfly wings. Dust the cakes with icing to finish.

This recipe is so so easy to do and you can do so many varitries! I hope you enjoyed this little cooking post, I may do some more of these as I love to bake!
